Ok, some thought it a good idea to have a recipe/cooking thread. So what do you say dads, what's "cookin' in your kitchen"?

Something I created and found to be easy, tasty, and quick is simply to take some boneless, skinless chicken breasts and place it in a glass 2" baking pan. Pour over the chicken your favorite salsa completely submerging it. Cover with foil. Cook it in the oven for 1 1/2 hours at 350 deg.

Serve with rice and you have a quick meal!

Country Dijon Chicken

skinless/boneless chicken breast- cut into pieces or left whole.

equal parts mayonnaise and stone ground mustard( I like Grey Poupon Country Dijon)- enough to cover the amount of chicken- do not substitute low fat or fat free mayo- it won't work...

minced garlic- use 2 T per pound of chicken or to preference. If chopping fresh garlic- use 2 cloves per pound.

1 C. sliced fresh mushrooms- or 1 can per pound of ckicken- optional but adds a lot to the dish. If using canned, drain first.

Mix wet ingredients together, then add chicken, coating completely.

Bake in covered dish at 350 for 1 hour or until bubbling. You will smell it when it's done.

Serve over rice. Asparagus or string beans are great veggie side dishes.

This has been a family favorite for years- it's called daddy's mustard chicken.

Boy those sound like some very good dinner ideas!!! I will post some of our kitchen ideas as well
